Mom's Eggplant "caviar"

Red Ripe Tomatoes, 500 grams, cubedEggplant, fresh, 900 grams, cubedOnions, raw, 550 grams, cubedGarlic, 6 clove, mincedGranulated Sugar, 2 lump (2 cubes) Cider Vinegar, 2 tbsp Salt, 1 tsp Olive Oil, 7 tbsp
heat 4 tbsp of olive oil in a deep skillet, add onion, cook on a medium heat until it becomes translucent. Put tomatoes in a deep saucepan, heat them, put eggplants, onion from the skillet, add salt, mix and cook for 20 min. Add vinegar, sugar and garlic, mix and cook 30 min. more. Let chill and then put in the fridge. Eat cold.
