Lou's Chicken & tom spicy soup

Ingredients
olive oil 4 tbsp1 cup of chicen stock concentrate1 large red onion2 tins of chopped toms2 leaks3 large carrots3 veg oxo cubes2 chicken oxo cubes2 cups of fresh parsly1-2 cups of basil2 large cloves garlic1 large red chili pepperReady cooked chicken breasts without skins.500mls of water
Directions
Big pan, heat oil, chop all veg, not too chunky.
Fine chop chilly and garlic.
Fry off onion, garlic chilli for 5 mins add rest to veg, cook for another 5 mins, add tinned toms, stock, water,oxo's.
cook for 10 mins simmer.
then add water bring to boil, then simmer from 20mins.
take 1/3 of veg out with slotted spoon.
blend other 2/3 untill smooth. if too thick add more water.
add back 1/3 of veg mix.
shread pre cooked chicken cut small
add to pan.
finly chop herbs, and add
then add salt and pepper to taste.
