Helen's Easy Lasanga

Ingredients

10 uncooked lasagna noodles3 cups pasta sauce2 cups cottage cheese (or ricotta)2 cups shredded mozarella1 10-oz package of fresh baby spinach leaves5 cups veggies of your choice (I use carrots & zuchinni)
Spray cooking spray on 9 x 14 lasagna dish.
Spread 1c of sauce on bottom of pan.
Lay 5 uncooked noodles in pan.
Spread 1c of sauce on noodles
Spread all cottage cheese
Spread on all veggies
Sprinkle on 1c mozarella
Layer on 5 uncooked noodles
Spread on 1c sauce.
Cover and bake at 325 for 60-70 minutes.
Remove cover, sprinkle on 1c mozarella and bake at 425 for 15 minutes.
Serving Size: Makes 10 portions, serves 5 in our house
