Baked Potato Skins

Ingredients
4 small potates, with skin1 string cheese2 slices turkey bacon1 small onion2 tbsp. olive oilseason to taste
Directions
Cut potatoes in half length wise, use a spoon to scrape out some of the potatoe from each skin, cook bacon and chop into small pieces, dice onion into small pieces, mix all spices and olive oil together and drizzle on each skin, top each skin with onions and bacon, pull apart string cheese and top each skin. Bake at 375 for approximately 40 mins or until tender. Serve with sour cream.
