2 lg heads of Cauliflower (or 4 cups)1 lb. turkey bacon1 lg Sweet Onion1 Tbsp. minced garlic1/2 cup 2% milk3 Tbsp. unsalted butter1 cp low fat Mozzerella Cheese1 cp monterey cheese1 cup low sodium Chicken Broth1/2 Tbsp Garlic Salt1/2 Tbsp Black Pepper. Plain Greek Yogurt and Greek onions for Garnish.
Peel, break apart and boil cauliflower till fork tender
Meanwhile, chop and brown turkey bacon, set aside. In same pan, saute' diced sweet onion and garlic.
Drain cauliflower and add butter and milk and blend till smooth. add bacon, onion, cheeses and broth. Bring to a boil then reduce heat and let simmer for 10 minutes.
add 1 Tbsp of Greek yogurt and sprinkle on green onion for garnish.
Serving Size: makes 8 1 cup servings
