8s Bean & Cauliflower Salad

15-16 oz kidney beans, cooked or canned, drain15-16 oz wax beans, cooked or canned, drain15-16 oz green beans, cooked or canned, drain2 cups raw cauliflower, chopped1/4 cup onion, chopped (optional)4 Tbsp sugar4 Tbsp apple cidar vinegar4 Tbsp extra virgin olive oil
Mix (drained) beans, chopped cauliflower, and diced onion. Mix vinegar, sugar, and oil in small bowl and then stir into bean mixture.
Refrigerate before serving (an hour or longer is best).
Serving Size: makes 8 1-cup side salad or 4 2-cup entree servings
