Chocolate muffins

Ingredients
2/3 cup cocoa powder1 3/4 cups whole grain flour1 cup brown sugar3/4 tsp espresso powder, optional1 tsp baking powder1 tsp baking soda3/4 tsp salt1 cup chocolate chips2 flaxseed eggs (mix 2 Tbsp flaxseeds with 6 Tbsp water to replace two eggs, let sit for 5 minutes before adding to recipe), or egg whites.1 Cup milk or milk substitute2 tsp vanilla2 tsp vinegar1/2 cup applesauce
Directions
Oven 400F. Prepare muffin pan with cooking spray or paper liners.

Whisk together dry ingredients, including brown sugar and chocolate chips.

Whisk flax eggs, milk, vanilla, and vinegar.

Add wet to dry and mix until just combined.

Add to muffin tin, fill 3/4 full. Bake 20-25 minutes.
