Fabulous Cottage Cheese Spinach Feta Bake

*Brown Rice, long grain, 1 cupwater, 2.5 cups Onions, raw, 2 cup, chopped Olive Oil, 1 tbsp Garlic, 2 cloves Spinach, frozen, 2 package (10 oz) yields Cottage Cheese, 1% Milkfat, 2 cup (not packed) Feta Cheese, 1 cup, crumbled Egg, fresh, 1 large *cayenne pepper, 1 tsp Basil, .33 tbsp*Soy Sauce, 1.5 tsp
Cook Brown rice in water til soft.
While rice is cooking saute onions in olive oil till brown.
Cook spinach and squeeze out excess water.
Combine all ingredients.
Spray casserole with spray oil and bake in pre-heated 350 degree oven till set. May top with parmesan cheese.
