Cinnamon Oatmeal Pancakes

Ingredients
1 egg1 egg white1 cup nonfat vanilla Greek yogurt.5 cup nonfat milk2 tbsp canola oil1 tsp vanilla extract1 cup all purpose flour nutri-blend (unbleached flour with wheat bran).25 cup sugar1.5 tsp baking powder.25 tsp baking soda.25 tsp salt.25 tsp cinnamon1 cup old fashioned rolled oats
Directions
Combine egg, egg white, yogurt, milk, oil and vanilla until smooth.

Add flour, sugar, baking powder, baking soda, salt and cinnamon until just mixed.

Stir in oats until just mixed.

Let batter rest for 5 minutes while griddle heats (med-low).

Spray griddle with cooking spray and pour about 3 tbsp of batter per pancake onto the hot griddle. Cook until bubbles form on top (2-3 minutes). Flip over and cook until lightly browned (2 minutes).

Serve at once with maple syrup.
