Ingredients
3 c. cooked macaroni shells1/4 c. garbanzo beans1/4 c. kidney beans1/4 c. canned green beans1/4 c. chopped green pepper1/4 small onion, diced 2 small avocados, diced3 large or 4 small boiled eggs, diced2 Tbsp. Low fat vegetable oil1 tsp. Balsamic VinegarSalt & Pepper to taste.1 oz. grated Parmesan cheese
Directions
Place cooked noodles, vegetables, and eggs in large bowl. Add diced avocado, oil and vinegar, and cheese. Mix well. Season to taste with salt and pepper.
