Atkins Asparagus Vinaigrette with Walnuts

*Asparagus, fresh, 1/4 lb ends removed *Onions, raw, 1/16th small finely chopped *Heinz White Wine Vinegar, 1.5 tsp *Grey Poupon Dijon Mustard, 1/4 tsp *Splenda, 1/4 tsp *Salt, dash *Pepper, black, dash *Olive Oil, 3 tsp *Spinach, fresh, 1 cup *Walnuts, 3 tsp pieces or chips
1. Toast nuts
2. Steam asparagus till crisp but tender, about 5 mins. Drain and pat dry.
3. Combine onion, vinegar, mustard, splenda, salt, and pepper in bowl. Gradually whisk in oil.
4. Divide lettuce on 4 plates; place asparagus on top then dress with vinaigrette and sprinkle with walnuts.
Serving Size: makes 1 servings
