Char's Low Fat Banana Oatmeal Muffins

Ingredients
1 cup old fashion rolled oats (not instant)1 cup non-fat milk1 cup whole wheat flour1/2 cup brown sugar2 mashed ripe bananas2 egg whites1 tsp. vanilla extract1 tsp. baking powder1/2 tsp. baking soda1/2 tsp. salt1/2 cup chopped walnuts
Directions
Soak oats in milk for about one hour
Preheat oven to 375 degrees
Spray muffin pan with cooking spray
Combine oat mixture with mashed banana, egg white and vanilla
In separate bowl measure and whisk the dry ingredients together
Add wet ingredients to dry and mix until just combined. Add nuts.
Spoon muffin mixture into muffin plan
Bake about 15 minutes.
Makes 12 muffins

    I made this into a banana loaf as that suits me better.It is moist and yummy
    I also added 1teaspoon of nutmeg and cinnamon to the mix.
    I also dereased the amount of the sugar - 2/25/09
