Blonde Enchiladas

8x Corn Tortillas (can use more to make smaller)1 cup cheese4-6 oz fat free sour cream1 can cream of chicken or cream of mushroom soup1 cooked shredded chicken (skinned rotisserie works)1 can green chilisOptional: Salsa VerdeOptional: 1 small white onion, fine chop
Mix sour cream, soup, chilis.
Remove 1/3 of mixture, add chicken and onion (if using) in a large bowl
Spoon into tortillas
Top with rest of wet mixture
Cover and bake at 350 for 20 minutes
Remove cover, top with cheese (if using), return to oven and increase temperature to 400. Bake until cheese is bubbly and it starts to brown
Serving Size: Makes 8x servings
