Tomatoe and Corn Pie

frozen pie crusta variety of shredded cheesescarmelized onionscorn nibletstomatoesParmesan cheeselow fat buttersalt pepper fresh basil
start to carmelize your onions in low fat butter
drizzle 1/3 rd the oil on the bottom of the pie shell, and add a little bit of pepper, then prick with a fork.
Add a layer of cheese, reserving a little bit for later,
top with carmelized onions, drizzel a little bit of the oil and add fresh bazil.
Add a layer of the corn with the shredded cheese that is left. top with slices of tomatoes, drizzle oil, salt, pepper and two tablespoons of parmesan cheese.
Bake in oven until brown and cooked through. I then placed it under the broiler for a few minutes.
Serving Size: makes 6 servings
