Crock Pot Lemon Chicken

Ingredients
2 lbs boneless skinless chicken breasts¼ c lemon juice & 2 T lemon zest1 c FF chicken broth1 med onion, chopped(2 T olive oil, 2 T vinegar, ½ t dried oregano,½ t salt, ⅛ t pepper, ½ t paprika, 2 T cornstarch)½ c light sour cream1 Cup Basmati Rice (cook as directed)
Directions
Cut chicken into chunks and place into crock pot. Combine lemon juice & zest, broth, onion, olive oil, vinegar, oregano, salt, pepper, & paprika; pour over chicken & mix well. Cover & cook 8 – 9 hours on low. Combine cornstarch & sour cream; add to crock pot & combine into chicken. Cover & cook on high for 20 – 30 minutes more or until sauce is thickened.
Prepare rice as directed. Serving: ½ cup
