Simple Grilled Salmon

1 1/2 lbs. salmon2 tablespoons olive oil2 tablespoons fresh dill1 garlic clove, minced1 tablespoon lemon juicesalt and pepper to taste
1. Prepare grill.
2. In a small bowl, combine oil, herbs, garlic, lemon juice, salt and pepper.
3. Using a pastry brush, brush salmon with herbed mixture.
4. Cook on the barbecue until done (salmon is done when it flakes when tested with a fork).
Makes 6 servings (4 ounces salmon)

Picked up some salmon tonight and made it on the grill. I usually make salmon using a Southern Living recipe with pecans, honey and breadcrumbs. Used dill rather than basil with this recipe and it came out beautifully! I am sure the calories and fat content were less as well. Will make it again. - 8/11/09
