BARLEY CASSEROLE

2 tbsp Olive Oil1 small onion ,chopped3/4 cup pearled barley2 cups sliced mushrooms2 cups fat free chicken broth2 tbsp chopped parsleysalt and pepper to taste
Heat oven to 350
heat olive oil over medium heat. Saute onion and barley until onion is soft and barley is golden.
Add mushrooms. stirring until lightly browned
Transfer mixture to 6 cup casserole. Add chicken stock, cover and cook for 1 hour stirring every 20 minutes
Add parsley, salt and pepper
Makes 6 servings
