Pumpkin Oatmeal

2 C oatmeal4 C low fat milk1 C pumpkin puree (canned if fresh is not available)1 t pumpkin pie spice (or cinnamon)2 t honeyOptional toppings:chopped walnutsalmondspumpkin seedspeanut butterraisinsdatescranberriesraw, shredded apple or carrot
Stir the oats, milk, pumpkin puree, and pumpkin pie spice together in a large saucepan. Bring the mixture to a gentle boil.
Reduce the heat and let it simmer for 5 minutes (or longer depending on personal tastes) mixing regularly to avoid "caking" on the bottom of the saucepan.
Serve or store for later consumption.
Experiment with optional toppings to augment the texture and flavors to your taste.
