Mrs. Minnesota's Healthy Hot Dish

2 boneless, skinless chicken breast1/3 C Newman’s Own oil and vinegar salad dressingOne package (8oz) turkey bacon, cut into small pieces4 C chicken broth1 C wild rice1 C finely chopped onions1 C diced carrots1 C diced celery2 oz chopped and toasted hazelnuts1/4 C dried cranberries or craisinssalt and pepper to taste
1. Preheat oven to 350 degrees.
2. cut chicken into cubes and marinade chicken overnight in Newman’s Own dressing
3. combine chicken (including the marinade), turkey bacon, chicken broth, wild rice, onion, carrots and celery in a heavy baking dish. Cover and bake at 350 degrees for 30 min, uncover and bake an additional 60 min or until most of the liquid is absorbed.
4. Top with toasted hazelnuts and cranberries, bake an additional 5 min.
