.5c Soy Flour (Hodgson Mill)1c Old Fashioned Oats2 scoops Vanilla Whey Protein Powder (Precision Engineered)4 tbsp Cocoa Powder (Ghiradelli)4 tbsp Stevia.5 tsp baking soda1c Unsweetened Applesauce.5c Water4 Egg WhitesCinnamon and salt to taste
Preheat oven to 350 degrees
Grind the oats in a food processor until they are as fine as possible. Combine ground oats, soy flour, whey protein powder, cocoa powder, baking soda, and cinnamon and salt in a bowl.
In a separate bowl, combine applesauce, egg whites, water, and stevia. Add the wet ingredients to the dry and stir well. Pour mixture into lightly greased 6 muffin tin.
Bake for 15-20 minutes. Remove and let cool in tin.
