Coconut Chocolate Chip Clif Bars

Ingredients
1 Cup of 5 Grain Oat Cereal (Old Wessex)*1 Cup of unsweetened puffed wheat cereal 1/4 Cup of whole almonds 4 T of Ground flaxseed1 T of Chia seeds1/4 Cup of packed shredded coconut 4 T of Pb2 - prepare right before adding 1/2 Cup of unsweetened applesauce2 T of Honey1 T of Maple Syrup (optional) 1 T of Virgin Coconut Oil 1/4 Cup of Dark Chocolate Chips
Directions
Preheat oven to 350 degrees
Prep an 8x8 pan with cooking spray

Take the oats, chia, almonds and coconut and toast in a pan over medium to low heat until everything starts to get fragrant. Stir everyone so often, as to not let the bottom burn.

After toasting, add to a food processor and pulse a few times to break up the almonds and the oats. Then add to a bowl along with the flaxseed and puffed cereal.

In a separate bowl, combine the honey, applesauce, prepared Pb2, maple syrup and coconut oil. Mix and pour over the dry ingredients.

Combine everything then spread into the bottom of the sprayed pan.

Sprinkle the chocolate chips evenly over the top and press down with your spatula to push them into the mix.

Bake in the oven for 20-25 minutes. Let cool and then cut into 8 bars.
