3 Eggs 1/4 cup coconut oil 1/4 cup milk2 teaspoons vanilla 1 small banana, mashed 1 cup flour1 cup whole grain flour1 cup old fashioned oats 1/3 cup brown sugar, packed 2 teaspoons baking soda 2 teaspoons cinnamon1/2 teaspoon salt 1 1/3 cups shredded carrot 2 cups shredded zucchini 1 small apple cored and chopped 1/2 cup coconut1/2 cup raisins1/2 cup chopped walnuts or almonds1 scoop (oz) of vanilla protein powder
Combine all dry ingredients, stir in nuts, raisins and apple. Combine mashed banana, eggs, oil, vanilla and milk. Add carrots and zucchini to these wet ingredients. Combine wet ingredients to dry, stirring just until moistened. Divide into muffin cups and bake at 350 degrees 20-25 minutes
