Ingredients
1 1/2 c. shredded hash browns2 T. canola oil1/2 c. frozen broccoli1/4 c. chopped onion1/2 c. chopped green pepper1 plum tomato diced1/2 c. sliced mushrooms1/4 c. frozen corn kernels1/3 c. shredded jack or cheddar cheese
Directions
Heat oil in heavy skillet. Add hash browns. Cook until browned. In a separate skillet, lightly saute remaining vegetables. Top potatoes with vegetables. Sprinkle cheese on top. Cover until cheese is melted.
