1 lb ground beef (lean) browned and drained 8 oz wavy lasagna noodles broken into pieces1 cup chicken stock1-28 oz can of crushed san marzano tomatoes2 oz tomato paste2 cloves of garlic minced1 small onion diced1 tbsp EVOO2 tsp dried oregano 2 tsp dried basil1/4 - 1/2 tsp red chile flakes1 fresno chile finely choppedsalt and pepper to taste1 cup mozzarella cheeseParmessan Cheese for garnish
Bring a pot of water to boil, salt it, and add broken lasagna pieces. Meanwhile, in a skillet add olive oil, brown ground beef and add onions, garlic, fresno chile, salt and pepper. When the onions are tender add the tomatoes, stock, and spices, then simmer for 10 minutes. Drain pasta when it is just a little undercooked and mix it with the sauce. Pour into a casserole dish and top with mozzarella cheese and place in the oven under the broiler until bubbly and slightly brown (about 10 minutes.)
