Blue Moose Cafe Black Bean Burgers

1 15oz can Black Beans (Rinsed, drained, and mashed)1/2 c Roasted Red Peppers (Diced)1/2 c corn1 c rice (medium or short grain is best) cooked or quinoa (substitute same amount)1 tbsp cumin2 tsp garlic1 tbsp oregano1 tsp paprikabread crumbs (1/2 to 3/4 cups)2 tsp worcestershire sauce2 tsp hot sauce (Preferably not tabasco style-go for something like cholula's)salt and pepper to taste
Cook the rice or quinoa as directions state. You will need 1 cup of cooked rice or quinoa.
Drain, rinse, and fully mash the black beans in a large bowl.
In a saute pan on medium heat, use 1 tbsp olive oil and saute the roasted red peppers and corn for 3-5 minutes until warmed and starting to brown slightly. Add all of the spices (dry), let heat for 1 minute then add the rice or quinoa, heating through fully for 2-3 minutes. Add the worcestershire and hot sauce to taste. Mix well and remove from the heat. Cool until you can handle.
Mix into the bowl with the mashed black beans and add the bread crumbs-you may need more than 1/2 cup-up to 3/4 cup. Season mixture with salt and pepper to taste.
Form patties- makes 6 decently sized patties.
In saute pan, place 1 tbsp oil and heat on medium-medium high. Place patty and heat, flipping to other side once bottom is crispy.
Serve on buns with tomato, lettuce, onion, and a blend of chipotle or cumin mixed with hot sauce in your mayonnaise. Serve immediately.
