6 cups organic vegetable broth1 (8 oz) smoked turkey leg (found in most grocery stores)1/2 pound dried lentils, rinsed and drained1 (8 oz) container refrigerated prechopped celery, onion, and bell pepper mix 2 tsp chopped fresh oregano OR 1/2 tsp dried oregano1/2 tsp freshly ground pepperNonfat Greek yogurt (optional)Oregano sprigs (optional)
Easy slow cooker recipe. Also works great in a pressure cooker. Makes your house smell delicious.
Cook in slow cooker on low 8 to 10 hours or until turkey falls off bone. Remove turkey leg from cooker. Remove and discard skin. Shred meat; return to cooker, discarding bone. Ladle soup into bowls and garnish with Greek Yogurt and oregano sprigs.
