Elisabeth's Zucchini Carrot Salad

Ingredients
1 large zucchini, peeled and grated1 large carrot, peeled and grated1 cup fresh tomato, chopped1 oz shredded cheddar cheese
Directions
After peeling and grating your carrot and zucchini, grate them finely and combine in a large bowl. Add chopped tomato and cheese.

Toss carefully to evenly distribute all ingredients.

Serve chilled.
