Ingredients
3 tsp. Powdered Egg White (or 3 egg whites)6 Tbs. Cool Water (omit if using egg whites)1 tsp. SweetLeaf Stevia1 tsp. Vanilla1/2 tsp. Pumpkin Pie Spice1 Tbs. Pumpkin (canned or fresh may be used)1/4 cup Unsweetened Milk (I used unsweetened flax)1.5 Tbs. Coconut Flour (like Bob's Red Mill)1.5 Tbs. Flour (I used Bob's Red Mill Low fat Soy Flour)1 tsp. Baking PowderTop with your choice of toppings and enjoy!(Be sure to adjust the nutritional info based on your additions or substitutions)
Directions
Heat waffle iron according to manufacturer's instruction.
Combine all of the ingredients.
Make your waffles!
