1c. whole wheat flour3/4 c. all-purpose flour1/4 c wheat germ1 tsp baking soda1/2 tsp salt1/2 c unsalted butter1/3 c splenda or artificial sweetener1/3 light brown sugar2 lg. eggs2 ripe mashed bananas1/3 c. milk or soy milk1 tsp vanilla extract1 c. frozen blueberries
Preheat oven to 375. Put flours, wheat germ, baking soda, salt and sugars together and whisk. Put aside. Put eggs, bananas, milk and vanilla together and whisk. Then add the dry ingredients to the liquid ingredients. Add the blueberries last. Pour into a muffin pan and bake until a fork comes out clean.
