Chicken, Shrimp, and Sausage Gumbo

Ingredients
2 Chicken hindquarters1/4 C Olive oil1/4 C Flour2 C Tomato sauce, no salt added8 oz Smoked sausage1 1/2 C Mixed vegetables10 oz Okra9 oz Shrimp
Directions
In a large pan, cover the chicken with plenty of water and simmer for 1-2 hours with seasonings to taste. Reserve resulting broth and remove bone and skin from chicken and chop into bite-sized pieces.

Heat oil in large pot and add flour. Cook over low heat, stirring constantly, until the mixture is medium brown but not burnt. Slowly add back 6 C of the broth, whisking vigorously to incorporate with roux. Add chicken meat, tomato sauce, sausage, vegetables, and okra and simmer 2-3 hours. Add shrimp and cook just until pink.
