Ingredients
* Butter, unsalted, 1 tbsp (mustard oil can be substituted for delicious flavour) * Salt, 1 tsp * Garlic, 3 clove, minced * Ginger Root, 2 tsp peeled and minced * Red Ripe Tomatoes, 1 cup, chopped or sliced * Water, tap, 2-3 cup (8 fl oz) *red Lentils, or mung dal 1 cup washed and picked overIndian spices you like: curry powder, cumin, coriander powder, asafetida, mustard seeds etc.
Directions
bring lentils to a boil in water, lower to simmer and cook until tender and water is absorbed, adding more water if needed. (20-30 minutes). Saute spices and tomatoes in butter or oil and mix in to lentils, salt to taste. Serve with brown rice or flat breads and steamed greens.
