Protein Packed French Toast Casserole with Protein Topping!

Ingredients
Ingredients:For the casserole:7 slices - Ener-G Light Brown Rice Bread (Gluten free)5 - egg whites1 cup - Unsweetened Vanilla Almond Milk 4oz - UnsweetenedApplesauce (4oz snack pack)10-15 drops - vanilla liquid stevia1 tbsp - Pure Vanilla Extract1 scoop - Cinnamon Roll Myofusion Probiotic Protein Powder1.5 scoops - MRM 100% All Natural Whey, Rich Vanilla2 tbsp - baking stevia or 5 - packets1 tbsp - Cinnamon1 tsp - Pumpkin Pie spice1/2 tsp - Hain Featherweight Baking Powder (gluten free and sodium free)For the topping:1/2 scoop - Cinnamon Roll Myofusion Probiotic Protein Powder1/2 scoop - - MRM 100% All Natural Whey, Rich Vanilla2 tbsp - Bell Plantation's PB2 (Powdered Peanut Butter) (plain or chocolate)2 tbsp - Pure Pumpkin1/2 tsp - vanilla extract10 drops - vanilla liquid stevia (5 drops)1/2 cup - Unsweetened Vanilla Almond Milk 1/2 cup - Water
Directions
For the casserole
-Heat oven to 400.
-Spray 9x13 pan with non stick spray.
-Cut bread into 1 inch chunks and set aside.
-Mix all LIQUID ingredients togther with a hand mixer in one bowl.
-Mix all DRY ingrdeients together in another bowl.
-Combine the liquid ingredients with the dry and mix with hand mixer.
-Once all ingredients are mixed and mixture is slightly thickened, add cubed bread and combine so that bread soaks up the liquid mixture.
-Let bread and liquid mixture sit for about 10min.
-Then pour the mixture into the baking pan and bake for 20 minutes.

For the topping:
-Combine all ingredients with a whisk or hand mixer.
-After casserole has baked for 20 minutes, pour on the topping and bake for another 5-10 mintues until casserole is set.

-Optional : after the casserole is baked and set, you can put it under the broiler for about 5 minutes until golden!

-Cut the casserole into 6 servings and serve hot! (with maple syrup if you want!)
