Flour, white, 2 cupBaking Powder, 1.5 tspBaking Soda, 1.5 tspSalt, .25 tspCinnamon, ground, 1 tbspEgg Beaters, 1/4 cupBrown Sugar, 2/3 cup, packedApple Butter, 1/2 cupVanilla Extract, 1 tspApple Cider 1/4 cup + 1 TBLGreek Yogurt nonfat Plain 1/3 cup*Sunsweet Lighter Bake (Butter & Oil Replacement), 1 tbspPowdered Sugar, 1/2 cup for rolling
Preheat oven to 375 degrees and spray a mini muffin pan with cooking spray.
In a large mixing bowl, combine the flour, baking powder, baking soda, salt, and cinnamon.
In another large bowl, mix the egg, brown sugar, apple butter, vanilla extract, honey, apple cider, yogurt, and "Lighter Bake". Pour the wet ingredients into the dry ingredient mixture and fold in until just incorporated. Using a small cookie scoop, fill a 24-hole mini muffin pan with one scoop of the batter. Bake for approximately 9-10 minutes. While donut holes are still warm,(bordering on hot) Roll the donut hole in the powdered sugar to coat the sides and top. Serve warm or at room temperature. This makes 58 of the most perfect little donut holes.
