Chicken Lasagna Roll ups

Ingredients
Lasagna noodles 16 noodles3 chicken breasts (boiled - then chopped fine)1 medium onion finely chopped6 cloves of garlic finely chopped2 cups skim ricotta cheese1 cup mozzarella cheese1 cup Parmesan cheese4 eggs1 package chopped spinach thawed1 jar Prego spaghetti sauce
Directions
Boil chicken - once cooked chop fine

In a large bowl, mix mix all ingredients except noodles and sauce and 1/2 mozzarella. Set aside.

Boil noodles as directed by package.

When noodles are done, drain.

Place a small layer of sauce on the bottom of the baking pan.

Take a noodle an lay flat. Arrange a coating of the chicken mixture onto the noodle - leave about 1" of the noodle uncovered on one end. Roll the noodle.

Cut the noodle in half - place in baking dish.

Repeat with all noodles.

Cover with remaining sauce.
Sprinkle remaining cheese over top.

Bake at 350 for 45 - 60 minutes.
