Roasted Root Vegetables

Ingredients
4 small beets ( I used 1 large yellow beet)4 small red potatoes1 medium carrot1 small onion2 tablespoons of olive oilSalt and Pepper to taste
Directions
Use baking pan with lid.
Cut veggies up into chunks
spray or stir in olive oil
sprinkle salt, pepper and other herbs as you want
Cook in oven 350 degrees F. for one hour.
