Vegetable Barley Pilaf

1/2 tbsp olive oil1 small onion, chopped2 cloves garlic, minced1 tbsp minced lemon rind1/2 tsp EACH salt and pepper1 medium zucchini, chopped1 medium bell pepper, chopped1 cup pearl barley2.5 cups chicken or vegetable broth1 cup frozen vegetable blend (opt. not in nutritional calculation)2 tbsp parsley
1. Saute onion, garlic, lemon rind, salt and pepper in olive oil.
2. Add zucchini, bell pepper and barley. Cook, stirring, until vegies are slightly softened, about 3 minutes.
3. Add stock/broth and bring to boil
4. Cover and simmer until tender, about 25 minutes
5. Add frozen vegetables if using, toss with fork and heat through, about 5 minutes
6. Stir in parsley.
