Red Quinoa Salad

Cook the Quinoa as directed on the box. Since I was cooking for a crowd, the whole box was used. Cut the tomatoes in half, dice the cucumber and the red peppers, finely chop the green onions (scallions) and mix in with the cooled Quinoa. In a small bowl mix together the balsamic vinegar, oregano, lime juice, olive oil. Salt and pepper to taste.
The instructions on the box state to cook for 10 - 15 minutes or until the liquid is absorbed.
