4 c zucchini, chopped2 c onion, chopped2 c yellow squash, chopped2 c eggplant, chopped1-1/2 c celery, chopped1-1/2 lb London Broil3 Tbsp Whole Wheat Flour1/2 tsp cracked pepper1/4 tsp paprika1 tsp corriander1-1/2 tsp minced garlic1 Tbsp Extra Light Olive Oil8 oz No Salt Added Tomato Sauce
Put all veggies in crockpot.
Mix together flour, pepper, paprika & corriander. Toss cut meat in flour. Heat pan with olive oil and minced garlic - cook meat until just looses pink. Add to crockpot. Cook on low 6-8 hours.
Serving size = 1 cup
