French Green Lentils

Ingredients
Green lentils1 onion3 cloves garlic2 cloves3 carrots.8lbs guanciale2 tbsp olive oil
Directions
Saute guanciale in olive oil. Slice carrots, chop onion, mince garlic and saute in olive oil. Add lentils and add 4 cups water. Cook covered until water is absorbed about 30 minutes.
