Spinach Fritata Party Pinwheels

I cup of fresh spinach, sliced into strips 1/4 inch wide1 large egg, beaten1/4 t. morton salt substitutepepper if desired1 ounce Swiss Cheese (I use Jarlsberg lowfat from the deli)1 t. coconut oil (I prefer Louana Coconut Oil for this recipe because it has no sweet coconut smell or taste)1 orange, peeled and cut into 6 sections50 grams sweet dark cherries (6)
Mix spinach shreds, beaten egg, and salt substitute.
Tear the cheese into pieces.
Lay the flatbread out on a cookie sheet or wax paper.
Heat the coconut oil in a frying pan.
Add the spinach/egg mixture. Spread it out into a rectangle shape (shape of flatbread)
Arrange your Swiss cheese on top.
Resist the urge to stir. Tilt the pan and allow the coconut oil to run under the fritata.
Flip.
Cook opposite cheesy side about 1 minute.
Turn out onto flatbread. Pull apart so the flatbread is equally covered.
Starting on long side, roll up and slice into 6+ pieces about an inch wide. Set pinwheels on serving plate alternating with an orange slice. If you have an extra pinwheels, set them in the center along with the cherries. There should be a picture of the Flatbread prep somewhere.
Serving Size: Makes 6 pinwheels, 53 calories each, or 1 breakfast serving for 315 calories.
