Reuben Roll Ups

1 low carb tortilla (I use La Tortilla Factory Low Carb, the smaller ones, I think they're about 7")Deli pastrami (I use Boar's Head deli meats because it's easy for me to find their nutrition info)Deli Corned BeefYellow Mustard (to taste, I don't measure it...you can use 1000 Island if you want authentic Reuben taste, but since I don't like it, I prefer plain mustard)Thin sliced Swiss cheeseSauerkraut (I think I manage to fit somewhere between 1/8 and 1/4 cup per roll up)
Heat griddle, panini press, or skillet to medium-high. Lay tortilla flat, in order put: mustard to taste, meats, sauerkraut, 1/4 slice of Swiss. Begin folding tortilla...sides in first, then fold the bottom up. Lay the other 1/4 slice of Swiss on top of the bottom fold, and then fold the top over it. (This allows the cheese to hold the tortilla in place) Place in panini press for 1-2 minutes until heated through and cheese is melting.
