Zucchini Bran Muffins

1C wheat bran2 1/2 C unbleached wheat flour1 C boiling water2 1/2 tsp baking soda1/2 C butter1/2 tsp salt2 C lowfat buttermilk2 C shredded zucchini 2 beaten eggs1 C sugar1/2 C brown sugar2 C wheat branoptional - 1/2 chopped nutsextra sugar to sprinkle on top
Mix 1 C wheat bran with boiling water in a large bowl. Add the butter to allow it to melt. Add buttermilk, eggs, sugars, zucchini (or other fruit) and remaining 2 C bran and mix well. In another bowl sift the dry ingredients together. Add the dry ingredients into the wet ingredients and mix well. Spoon into prepared muffin pans. Sprinkle additional sugar on top if desired. Bake at 400 degrees for about 20-25 minutes. Remove muffins from pan and place on rack to cool.
