Mediterranean bean soup

Ingredients
Olive Oil, 3 tbsp 1 Onion, chopped*Potato, raw, 1 large (3" to 4-1/4" dia.), dicedGarlic, 2 cloves choppedChicken stock, home-prepared, 5 cup Beans, white, 14 oz, cannedCabbage, savoy, fresh, 1 cup, shredded *Parsely, raw 1 Tablespoon, 3 tbsp Oregano, ground, 2 tbsp
Directions
Heat oil and gently cook onion, potato and garlic. Pour on stock and add liquid from canned beans.Cover and simmer for 15 minutes. Stir in cabbage, beans, herbs and cook for 10 more minutes. Spoon one third into a food processor and process. Then return it to the hot soup and mix. Serve with parmesan and garlic toast.
