Tilapia Tacos

1 lb fresh tilapia fillets1 tbsp olive oil1 medium onion, chopped1 jalapenio pepper - chopped1 cup of tomatoes - diced1/4 cup fresh cilantro - chopped3 tbsp lime juicesea salt, black pepper, onion powder, garlic powder to taste
1. In large skillet over a medium-high heat, combine olive oil, garlic, and onions. Cook for about 5 mins until the onions are soft and translucent.
2. Add the tilapia fillets to the skillet. Allow the fillets to cook for 3 to 4 mins on one side prior to flipping. As the fish begins to cook through, use a fork to break it apart into flaky pieces.
3. Add the jalapeno pepper, tomatoes, cilantro and lime juice to the mix and then season with salt, pepper, onion powder, and garlic powder to taste. Cook for 5 minutes before removing from heat.
Serving Size: makes 4 servings
