Ingredients
24 oz Shredded Hash Browns7 eggs1/2 c Skim Milk3 oz Bacon Bits12 oz Baby Spinach, slightly wilted or frozen & thawed4 Roma Tomatoes, chopped, juice dried14 Green Onions, whole thing chopped16 oz Sliced White Mushrooms14oz Sharp Cheddar, 2%
Directions
Spray cookie sheet. Spread partially thawed Hash Browns in pan. Bake 35 min at 400. While baking wisk eggs & milk in Microwave container. Microwave 3 min on High. Stir and add Bacon Bits. Microwave 3 more min on High. Let cool some. Stir.

Top cooked Hash Browns with Eggs, Spinach, Tomatoes, Onions, Mushrooms, & Cheese. Bake for 10-15 more minutes at 400.
