Crispy Steak and Kidney Pie

• 225g ( ½ lb) lean steak and kidney • 1 small red onion, finely chopped • ½ tbsp chopped fresh thyme • 1 tbsps gravy granules • 3 sheets filo pastry • 1 egg, beaten with 1 tbsp semi-skimmed milk • fresh parsley to garnish
1. Chop the steak and kidney into pieces and place in a saucepan with the onion and thyme. Just cover with water and bring to a gentle simmer.
2. Stir in the gravy granules until the gravy starts to thicken. Reduce the heat and simmer until the meat is tender. Allow to cool slightly.
3. Preheat the oven to 200C, 400F, Gas Mark 6.
4. Once the meat is cool, use a slotted spoon to spoon it into the bottom of an ovenproof dish.
5. Take a sheet of filo pastry, brush lightly with the milk and egg mixture and carefully place over the meat. Repeat, using the other sheets, and trim the pastry around the outside of the dish with scissors.
6. Bake in the oven for 15–20 minutes until golden brown. Serve with a selection of fresh vegetables.
