2 cups flour1 Tbsp baking powder½ tsp salt1 cup unsalted butter, at room temperature1 ¼ cups sugar4 eggs1 ½ tsp vanilla extract1/3 cup milk
1. Preheat oven to 350 degrees. In a medium bowl soft together flour, baking powder and salt. Set aside.
2. In a large bowl using an electric mixer beat sugar and butter until pale and fluffy; about 3 minutes. Scrape down the sides of bowl as needed.
3. Add eggs one at a time, beating well after each. Beat in vanilla.
4. With mixer on low, gradually add flour mixture alternating with milk. Mix until smooth.
5. Scoop batter into line muffin tins and smooth tops with spoon.
6. Place in middle of oven and bake until lightly golden or toothpick inserted comes out clean.
