Tampico Chicken

Ingredients
4 chicken breasts pounded until 2x their size1 jalapeno4 oz pepper jack cheese1 10.5 oz can 98% fat free campbell's cream of celery1 yellow onion, coarsely choppedbread crumbs to coategg whites to coat1 stick of salted butter
Directions
egg and bread the pounded chicken breasts
brown in salted butter and sauteed onion
once browned, set aside chicken and add soup, jalapeno, and cheese to the butter and onions. Once cheese is completely melted, layer sauce and browned chicken in baking dish. Bake for 30-40 minutes on 375, until chicken is completely cooked and sauce is bubbly.

Serving Size: makes 8 servings (1/2 a chicken breast each)
