Low fat & low cal *vegan* Pumpkin Muffins

pumpkin, apple sauce, whole wheat flour, brown sugar, vanilla, flax seeds
2 cups ww flour
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
egg replacer for 3 eggs (I use flax meal, 3 Tbsp + 6 Tbsp water)
1/2 cup - unsweetened applesauce
1 tsp vanilla
1 cup PURE PUMPKIN!! (NOT the pumpkin PIE mix)
I added ~1/2 c soy milk
Mix all ingredients til moistened. put in muffin greased muffin tins Bake at 350, for 20 min or till cooked through.
Serving Size: Makes 12 muffins
