Zuchinni Cakes

Ingredients
1 cup Steel Cut Oats (Soaked Overnight)1 cup Flax Milk (Unsweetened)1 cup Shredded Raw Zucchini1 tbsp Chia Seed1/2 cup Unsweetened Applesauce1 tbsp Ground cinnamon6 Stevia packets1 tbsp Vanilla Extract
Directions
Soak 1 cup of steel cut oats in 2 cups of water overnight (or 8 hours).
Mix soaked oats, with all the required ingredients.
Use a 6 giant muffin tin OR 6 small ramekins, spray with non stick cooking spray. Divide mixture into 6.
Bake in 350 F oven for 45 minutes.
Allow to cool inside oven for about 10 minutes, remove from oven and cover with foil. You may eat right away or allow to completely cool and store in ziploc bag for use during the week. Can be re heated in microwave for 30 seconds.
